Roots in Food

ch korma with root vegsI thought I had the fixings for chicken korma, or one of the variations I spring on the family. I like to use mango. Or pears in a pinch. I forgot to drop raisins in it.

So I sautéed garam masala, plus garlic coriander, cumin, and paprika. Added a puree of red peppers, sweetened jalapeño (out of a can), beets, potato, and a small peach. Coconut milk and peanut butter, nod to Thailand. Chicken and carrots. Sunflower seeds chopped up and blended in at the last minute.

I don’t think Indians foresaw sweetened pickled jalapeños or beets. I like my root vegetables–hearty fare for a cold day. I like mixing up combinations probably never thought up before. And probably never repeated exactly the same again, at least in this house.

The verdict: 7 from the wife and 7.5 from the young miss.
