What’s For Dinner

I haven’t been in a cooking mood in some time. That changed last week. Two nice batches of vegetable chili and now, dinner tonight.

South Asian purists might wince, but no ghee or even butter (alas) to cater to the vegan miss. Sauteed garlic in my go-to spice blend (coriander, paprika, cumin), then mango, orange juice, almond milk (no yogurt, alas), tomatoes and chiles. Then carrots, broccoli, and cauliflower. 

The image left, is just before the addition of cardamom and cilantro. No cashews on hand (alas) so the vegan miss contributed a bit of her peanut butter.

And desert? My favorite daughter baked peanut butter chocolate chip cookies today. How she gets them to light and fluffy without eggs, I can’t match.

Meanwhile, yum.
